Ingredients
1 box thawed Western Family deep dish pie crusts
2 large apples (pink ladies are our go to!)
3 T Western Family salted butter
1/4 cup brown sugar
1 tsp cinnamon
1 Tbsp lemon juice
1 egg sugar to sprinkle (raw sugar works best but granulated will work too!)
Directions
  1. Preheat the oven to 375 degrees Fahrenheit. Peel, core, and finely dice the apples.
  2. In a saucepan over medium heat, combine diced apples, 3 tablespoons Western Family salted butter, 1/4 cup brown sugar, 1 teaspoon cinnamon, and 1 tablespoon lemon juice. Simmer until apples start to soften, about 5 minutes. Remove from heat.
  3. Remove one pie crust from the tin and gently roll it out until smooth. Using a 2.5-inch cutter, cut out 12-15 cookie rounds. Combine and re-roll the scraps as needed.
  4. Place the rounds on a cookie sheet lined with parchment paper. Add approximately 2 teaspoons of apple filling to each cookie round.
  5. Remove the second pie crust from the tin and gently roll it out until smooth.
    1. Option A (Lattice Top): Cut the pastry into 1/8-inch strips and weave them into a lattice pattern on each cookie. Trim extra lengths using the cookie cutter and press around the edges with a fork to seal.
    2. Option B (Solid Top with X): Use the 2.5-inch cutter to create 12-15 rounds. Cut a small "X" in the center of each round. Layer the rounds on top of the filled cookies and press around the edges with a fork to seal.
  6. Beat one egg and brush it over the tops of the cookies. Sprinkle the tops with sugar (raw sugar works best, but granulated will work too).
  7. Bake the cookies for 10-12 minutes or until the tops are lightly browned. Remove from the oven and let cool before serving. Enjoy your delicious apple pie cookies!
