Bakewell Tarts

Ingredients
1 teaspoon jam (per tart shell)
1 cup margarine
2 cups flour
2 cups sugar
4 eggs
4 teaspoons baking powder
Directions
- Line tart shells with pastry or use ready-made ones; add 1 tsp of jam to each.
- Melt margarine and combine with sugar, flour, and baking powder; mix well.
- Stir in beaten eggs; optionally add 1 cup of shredded coconut.
- Spoon 1 tbsp of mixture over the jam in each shell.
- Bake at 350°F (175°C) for 20 minutes or until tops are golden and set.
