Ingredients
1⁄3 cup +1 Tbsp plain yogurt
1 Tbsp orange juice
2 tsp rice vinegar
2 tsp honey
1/4 tsp dried oregano
1⁄8 tsp ground cumin
Directions
  1. Make salad dressing by combining yogurt, juice, vinegar, honey, oregano, cumin, salt and pepper in a small bowl.

 

  1. To makes salads, line two plates with butter lettuce leaves (or mixed salad greens). Fan the grapefruit, orange and avocado slices around the outer edges of the lettuce (or greens). Divide and mound shrimp in the centre of each salad. Top each salad with some Italian parsley sprigs, if using, and then serve with the dressing, for drizzle on the salads at the table.
