Strip Loin Steaks with Espresso Whiskey Sauce
Strip Loin Steaks with Espresso Whiskey Sauce

Ingredients
3/4 cup espresso (see Note and Options)
1/4 cup Canadian or other whiskey, such as bourbon
1/4 cup brown sugar
1/3 cup ketchup
2 Tbsp rice vinegar or cider vinegar
2 tsp Worcestershire sauce
2 tsp soy sauce
salt and freshly ground black pepper, to taste
4 strip loin steaks
1 Tbsp olive oil
Directions
  1. Combine espresso, whiskey, sugar, ketchup, vinegar, Worcestershire sauce and soy sauce in a small pot, set over medium-high heat and bring to a gently simmer. Lower heat as needed to maintain that gentle simmer. Simmer mixture until lightly thickened and reduced to about 3/4 cup. Remove this espresso whiskey sauce from the heat, cover and set it aside for now.

 

  1. Heat your barbecue or indoor grill to medium-high (see Options). Pat steaks dry with paper towel. Brush steaks lightly with the olive oil; season with salt and pepper. Grill steaks to the desired doneness, allowing about 2 to 3 minutes per side for rare, and 3 to 4 minutes per side for medium-rare to medium.

 

  1. When steaks are almost ready, set the sauce back over the heat to warm up again. When steaks are ready, plate them, drizzle each one with a heaping tablespoon or so of the sauce, and serve.

 

Note: If you don’t have an espresso maker in your home, buy and use the instant espresso powder sold in our coffee aisle to make the espresso needed here.

 

Options: Instead of espresso, use 3/4-cup strongly brewed coffee in the sauce. If you don’t have a barbecue or grill pan, pan sear the steaks in hot oil in a large skillet to the desired doneness.
