Aioli is garlic-flavoured mayonnaise. This version of it is spiced up with smoky chipotle peppers. Once the steaks are cooked and plated, dollop some of the aioli alongside them, for tastily dipping the meat into.

Ingredients
3/4 cup mayonnaise
2 chipotle peppers, minced (see Note)
2 tsp adobo sauce
1/4 tsp garlic powder
1 Tbsp lime juice
2 tsp honey
1 Tbsp finely chopped fresh cilantro or parsley
salt and freshly ground black pepper, to taste
olive oil 4 (about 6 to 8 oz./170 to 225 g) top sirloin steaks
4 tsp olive oil
Directions
  1. To make aioli, combine mayonnaise, minced chipotle peppers, adobo sauce, garlic powder, lime juice, honey and cilantro (or parsley) in a bowl. Taste and season with salt. Cover aioli and refrigerate until needed.

 

  1. Heat your barbecue or indoor grill to medium-high. Pat steaks dry with paper towel. Brush each steak with 1 tsp olive oil; season with salt and pepper. Grill steaks to the desired doneness, allowing about 2 to 3 minutes per side for rare, and 3 to 4 minutes per side for medium-rare to medium. Plate the steaks and serve with the aioli.

 

Note: Chipotle peppers are smoked jalapeño peppers packed in adobo sauce. They are sold in cans in our Mexican foods aisle. Unused peppers can be stored in a tightly sealed jar in the refrigerator for several weeks.
