- Pat prawn skewers dry with paper towel and set on a wide plate. Combine olive oil, juice, zest, oregano, garlic and red pepper flakes in a small bowl. Brush some of this mixture on both sides of each prawn skewer. Let prawns marinate 20 minutes.
- Heat your barbecue or indoor grill to medium-high. Set on the prawn skewers and brush them with any oil mixture left on the plate. Grill skewers 1 to 2 minutes per side, or until hot, in the case of cooked prawn skewers, or cooked through, in the case of the raw ones.
- Set prawn skewers on individual serving plates or a platter, garnish with lemon slices and parsley sprigs, and serve with a bowl of tzatziki, for dipping.
