Ingredients
4 (6 oz./170 gram) sockeye or other salmon fillets
1 Tbsp + 1 tsp olive oil
1/2 tsp ground cumin
1/2 tsp smoked or regular paprika
salt and ground white pepper, to taste
3/4 cup walnut pieces
3 Tbsp honey
3 Tbsp lemon juice
1 Tbsp water
lemon slices and parsley sprigs, for garnish (optional)
Directions
  1. Preheat oven to 425 F. Line a baking sheet with parchment paper and set on the salmon fillets, skin-side-down. Combine oil, cumin and paprika in a small bowl. Brush some of that mixture on each salmon fillet. Season salmon with salt and pepper. Roast salmon 12 minutes, or until just cooked through.

 

  1. While salmon cooks, place walnuts in a small skillet and set over medium heat. Heat the walnuts until lightly toasted, about 4 to 5 minutes. Remove skillet from the heat and add the honey, lemon juice and water and stir to combine.

 

  1. When salmon is cooked, plate the fish and top each piece with some of the walnuts, honey and lemon. Garnish with lemon slices and parsley sprigs, if using, and serve.

 

Options: This recipe could be halved if you are only serving two. If you do that, know that 3/4 cup of walnut pieces, halved, equals use 1/4 cup plus 2 Tbsp.  Also know that 1 Tbsp equals 3 tsp.
