Ingredients
200 to 225 grams dry spaghetti
2 tsp butter
2 tsp olive oil
1 large garlic clove, minced
1/8 tsp red pepper flakes, or to taste
12 to 14 large cooked, cold peeled prawns or shrimp (see Note)
1/4 cup chicken or vegetable stock
2 Tbsp chopped fresh parsley, basil or oregano
salt and freshly ground black pepper, to taste
freshly grated Parmesan cheese, to taste
parsley, basil or oregano sprigs, and lemon slices, for garnish
Directions
  1. Bring a large pot of lightly salted water to a boil. Add the spaghetti and cook until just tender (see package for suggested cooking time).

 

  1. When spaghetti is almost cooked, place butter and oil in a 10-inch or so wide skillet set over medium, medium-high heat. When butter is melted, add garlic and pepper flakes and cook and stir a few seconds until garlic is fragrant and very light golden (do not burn). Add the prawns and stock, bring to a simmer, and cook 1 to 2 minutes, or until prawns are hot. 

 

  1. When spaghetti is cooked, add 1/4 cup of its cooking liquid to the skillet with the prawns in it, and then drain the pasta well. Add the pasta, parsley (or basil or oregano), salt and pepper to the skillet, toss to combine and cook 30 seconds more.

 

  1. Divide pasta between 2 shallow bowls and garnish with sprigs of parsley (or basil or oregano) and lemon slices. At the dinner table, squeeze the juice from the lemon slices over the spaghetti and prawns, sprinkling them with some freshly grated Parmesan cheese, and enjoy.

 

Note: Cooked, peeled prawns are sold in our Seafood Department. You can buy them frozen, or thawed from frozen.
